Mixed Berry compote
2 cups fresh or frozen mixed berries
1/2 cup Swerve sweetener (or sugar)
1 teaspoon corn starch
1 teaspoon water
Combine mixed berries (or your favorite fruit) and Swerve in saucepan covering the fruit, over medium heat until softened and bubbling. Meanwhile, mix together water and cornstarch into a slurry. Once fruit mixture is bubbling, add slurry and let cook until thickened. Remove from heat and let cool to room temperature. Use to put on pancakes, fruit smoothies or in your homemade yogurt.
